HACCP internal auditor training is a course that teaches food safety professionals how to audit a HACCP-based food safety management system from the inside. It covers the seven HACCP principles plus the skills to plan, conduct, report and follow up internal audits.

This course runs for 2 days. Day 1 covers HACCP fundamentals and the seven principles; Day 2 covers internal auditing, a mock audit and a written assessment.

The seven HACCP principles are: (1) hazard analysis, (2) determination of CCPs, (3) establishing critical limits, (4) monitoring systems, (5) corrective actions, (6) verification activities, and (7) documentation and record keeping.

It suits HACCP and food safety team members, QA/QC professionals, production and hygiene staff, and existing internal auditors who want to audit food safety management systems aligned with Codex, ISO 22000 and FSSC 22000.

No formal prerequisites are required. A basic understanding of food safety or HACCP concepts is helpful but not mandatory, as the course begins with HACCP fundamentals.

Yes. Participants who complete the training and pass the written assessment receive a certificate confirming HACCP internal auditor competency.
